Ingredients

For the No Maida Mix Veg Pancakes
• Mixed Vegetables: 2.5 cups (cut into thick juliennes)
• Note: You used bell peppers, zucchini, carrot, onion, cabbage, and sliced palak.
• Spices & Aromatics:
• 1/2 tsp Ajwain (Carom seeds)
• Salt (to taste)
• 2-3 green chillies (finely chopped)
• 1 small piece ginger (finely chopped)
• 3-4 garlic cloves (finely chopped)
• Binding Agents:
• 1/4 cup Besan (Chickpea flour)
• 2-3 tbsp Rice flour
• For Cooking: A few spoons of water (only if required) and oil for greasing the tawa.
For the Dipping Sauce
• 2 tbsp Soy sauce (light and thin)
• 1 tsp Vinegar
• 1 tbsp Honey
• 1 tsp White sesame seeds
Recipe -
The Healthy Swap: * Low Calorie: Just ~80 kcal per pancake!
* High Fiber: 2.5 cups of fresh vegetables—no empty carbs here.
* Gut Friendly: Added Ajwain for easy digestion.
* Better Dip: My homemade sauce is light, delicious, and far lower in calories than sugary store-bought ketchup. 🍯
Recipe: * Take 2.5 cup mixed vegetables, cut into thick juliennes. I have taken bell peppers, zucchini, carrot, onion, cabbage, sliced palak.
* Into that add 1/2 tsp Ajwain, salt, finely chopped 2-3 green chillies, a small piece of finely chopped ginger and 3 to 4 garlic cloves finely chopped.
* Mix everything well.
* Now for binding, add 1/4 cup besan and 2-3 tbs rice flour. Mix everything.
* If required, add a few spoons of water; mixture should be dry only; and not runny.
* Now, with help of spoon, small portion of batter on heated and greased tawa.
* Cook on medium flame on both the sides till you get golden color. Do not overcook this pan cake; as we want vegetable crunch to remain.
* For Dipping sauce - mix 2 tbs soy sauce (light and thin), 1 tsp vinegar, 1 tbs honey and 1 tsp white sesame seeds.
