*Ingredients:*
_For the cake:_
- 3¼ cups flour
- 1 cup sugar
- ½ cup packed brown sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- ½ tsp ground allspice
- 2 cups unsweetened applesauce
- ¾ cup plant-based milk
- ½ cup neutral oil
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla extract
_For the vegan buttercream:_
- 2 sticks vegan butter
- 2½ cups powdered sugar
- 1 tsp vanilla extract
- 1–2 Tbsp plant-based milk (as needed)
_For the apple topping:_
- 3 apples, peeled and sliced
- ½ stick vegan butter
- 2 Tbsp brown sugar
- 2 Tbsp sugar
- 1 tsp cinnamon
- ¼ cup caramel sauce
*1. Prepare the cake batter*
Preheat the oven to 350°F and grease or line a 10-inch round cake pan. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and allspice until evenly combined. Then, add the applesauce, plant-based milk, oil, vinegar, and vanilla extract. Mix just until combined — do not overmix. Spread evenly into the prepared pan.

Bake at 350°F for 30 min and check with a toothpick until cooked through. Remove from the oven and let it cool completely while you make the buttercream. In another large bowl, beat the vegan butter until light and fluffy. Add powdered sugar and vanilla, mixing until smooth.
