This classic Indian street food can be made right at home with ingredients you probably have somewhere in the pantry. Think spiced potatoes and peas, a flaky homemade dough, and fried to golden perfection with ghee, or in the air-fryer for a healthier option. Theyβre great as a vegetarian/vegan friendly party food or appetizer that delivers authentic flavor in every bite-sized piece. Serve it with mint yogurt dip or chutney for the ultimate samosa experience!

*Ingredients:*
_For the dough:_
- 4 cups flour
- 1 tsp salt
- 1 tsp ground cumin
- Β½ cup vegetable oil
- ΒΎ cup water
_For the filling:_
- 4 medium potatoes, boiled and peeled
- 1 red onion, finely diced
- Β½ cup frozen peas
- Β½ cup chopped fresh cilantro
- 1 tbsp ghee, or neutral oil (vegan option)
- 1 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp chili powder
- 1 tsp ground coriander
- 1 tsp paprika powder
- salt and black pepper, to taste
- oil for frying
*1. Make the filling*
To a large pot, sautΓ© the onions in ghee or oil until translucent. Add in the boiled diced potatoes, garam masala, ground turmeric, chili powder, ground coriander, paprika powder, salt, and pepper, and cook until the potatoes are tender. Mash everything together with a fork until mostly smooth, then fold in the peas and cilantro. Set aside to let the filling cool completely.
*2. Make the dough*
Mix the flour, salt, and cumin in a large bowl. Add water and oil slowly, then knead until a smooth, firm dough forms. Divide the dough into small balls and roll each ball into a thin circle and cut it in half.
*3. Assemble and fry*
Shape each half into a cone, fill with the potato mixture, and seal the top with a little water. Heat neutral oil in a deep skillet and fry the samosas in batches until they are golden brown and crispy. Serve with a yogurt-mint dip or chutney and enjoy!
