Add the chopped onions and sauté lightly. Add the garlic and ginger. Sauté well. Add the chopped green chilies and cashews. Continue cooking until the raw smell of the onions disappears. Add a little water, mix, cover, and cook on low heat for 3–4 minutes. Turn off the heat and add a generous amount of fresh coriander leaves along with the tender stems. Let the mixture cool, then blend into a smooth paste, adding a little water if needed. Step 2: Fry the Eggs Make a few shallow cuts on the boiled eggs. Add the eggs to the same pan. Sprinkle in the red chili powder, turmeric, salt, and oil. Mix well so the eggs are evenly coated. Fry until lightly golden, sprinkling a little water if needed during frying. Remove the eggs and set aside. Step 3: Prepare the Curry Heat 5–6 tablespoons of oil and 1 tablespoon of butter in a pan. Add the cardamom, cloves, and cinnamon. Fry until fragrant. Add the prepared green masala paste and cook over high heat, stirring frequently. (Cover the pan if it splatters.) After 2–3 minutes, add the black pepper, cumin powder, garam masala, turmeric, and salt. Continue cooking until the oil begins separating from the masala. Turn off the heat temporarily and stir in the yogurt. Mix thoroughly before turning the heat back on to prevent the yogurt from curdling. Cook until the raw smell of the yogurt disappears. Add the fresh cream (or blended malai) and cook until the oil separates again. Add the fried eggs along with any remaining spice mixture from the frying pan. Mix gently to coat the eggs. Add the roasted and crushed kasuri methi and some fresh coriander leaves. Cover and cook on low heat for 4–5 minutes. Serve Your creamy, soft, golden egg curry is ready. Turn off the heat and serve hot with naan, roti, paratha, or steamed rice.
