Домашний адыгейский сыр   Молоко 3,2% - 4 л Уксус 9% - 25-50 мл (смотрите как сворачивается молоко)   Если нет формы, то можно взять дуршлаг. В форме получается красивый сыр, стоит недорого, один раз приобрели и всегда делаете. Молоко можно брать любое магазинное или домашнее. Нагреваем его до температуры 75 градусов постоянно мешая, чтобы не пригорело (Если нет термометра, то до того, момента как появятся шапочки. Кипеть не должно!). Снимаем с плиты и постепенно вводим уксус, в этот момент масса должна разделиться на хлопья и зеленоватую сыворотку (если не отделилось, то добавить еще чуть уксуса). Перекладываем в форму, солим и даем стечь сыворотке 30 минут. Переворачиваем, опять солим и убираем в холодильник на 2-3 часа. Хранится такой сыр в холодильнике до 7 дней.
