📌 INGREDIENTS:
- 500g Cashews (Kaju)
- 250g Sugar (half the weight of cashews)
- 1 cup Water (slightly more than half the sugar quantity)
- ¼ cup Milk powder
- ½ tsp Cardamom powder
- 2 tbsp Ghee
🍽️ METHOD:
1. Freeze cashews for 15–20 mins before grinding — prevents oil release
2. Grind in short pulses, open & stir in between to release heat — grind to a fine powder
3. Sieve the cashew powder for an ultra-smooth texture
4. In a non-stick pan, dissolve sugar in water on medium flame — no thread consistency needed!
5. Add cashew powder & mix well
6. Lower flame, add milk powder — stir continuously to avoid lumps
7. Add cardamom powder & 2 tbsp ghee — keep stirring on medium flame
8. Cook 5–6 mins until mixture starts leaving the sides of the pan
9. Transfer to a plate, spread to cool, then gather & cover with plastic sheet
10. Roll out evenly, cut straight lines then diagonally into diamond shapes
11. Rest for 1–2 hours until set — then separate & serve! 💎
💡 PRO TIPS:
- Always use a non-stick pan for Kaju Katli
- Freeze cashews before grinding — it prevents the cashews from releasing oil
