I’ve been working on my NEW cookbook for the past 2 years and having the pleasure of testing all of my recipes on my own family🥰 Here’s a delicious one-pan dish that I’ve been craving and added to our weekly rotation! One Pan BBQ chicken Herby Rice with currants & almonds Serves 6 Ingredients: 1 Tbsp ghee 3 eschallots (finely diced) * 1 brown onion also works fine 4 garlic cloves (minced) 2 cups basmati rice (washed well) 4 cups chicken stock ½ tsp salt ¼ tsp turmeric powder ⅓ cup fresh parsley (finely chopped) 1 Tbsp olive oil ½ cup currants ⅓ cup slivered almonds 1 BBQ chicken (shredded, skin & carcass removed) Method: 1. Preheat oven to 180°C 2. Heat ghee in a large cast iron pot on medium-high heat and saute onion and garlic until translucent 3. Add rice and stir well for 30 seconds to 1 minute before adding chicken stock 4. Add remaining ingredients (except slivered almonds) and take pot off the heat 5. Gently stir together, cover with a lid and place in the oven to bake for 30 minutes *do not stir the rice* 6. Meanwhile, heat a small frypan over medium-high heat and add slivered almonds. Continuously shake and flip almonds until aromatically nutty and golden brown 7. Remove the rice dish from the oven, keep the lid on and allow it to sit for 5 minutes. 8. Fluff rice with a fork and gently toss through shredded chicken 9. Finally, sprinkle toasted almonds on top and enjoy hot (alternatively, serve rice and chicken in separate bowls) #healthydinner #onepotmeal #onepotdinner #healthyfamilymeals
