Make the citrus-herb dressing: Whisk together the honey, mint, basil, lemon zest and juice, and salt in a small bowl or jar. Set aside. 2. Make the salad: Arrange the watermelon, cucumber, and feta on a large platter or board in a checkered pattern for a bold, geometric look. 3. Chill for 15 minutes.
