Ingredients:
Prepare Lal Mirch & Lehsan Chutney:
-Kashmiri lal mirch (Kashmiri red chillies) soaked 3
-Lehsan (Garlic) 5-6 cloves
-Iodized Himalayan pink salt ½ tsp to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Tatri (Citric acid) ½ tsp
-Water ¼ Cup
Prepare Mash Daal Bhalle:
-Mash daal (White lentil gram) 1 Cup (Soaked)
-Zeera (Cumin seeds) ½ tsp
-Iodized Himalayan pink salt ½ tsp to taste
-Ajwain (Carom seeds) ¼ tsp
-Hari mirch (Green chillies) 2
-Water 1 Cup (add gradually)
-Baking soda ¼ tsp
-Dalda cooking oil 1 tbs
-Water ¼ Cup or as required
-Dalda cooking oil (For frying) as required
-Water as required
Assembling:
-Dahi as required
-Hari chutney as required
-Khatti meethi chutney as required
-Chaat masala as required
Direction:
Prepare Lal Mirch & Lehsan Chutney:
-In a blending jar, add kashmiri lal mirch, garlic cloves, pink salt, red chilli crush, citric acid, water & blend well, set aside.
Prepare Mash Daal Bhalle:
-In a blending jug, add white lentil gram, cumin, pink salt, carom seeds, green chillies, water (add gradually), & blend well to make a smooth batter.
-Transfer it to a bowl, whisk for 4-5 minutes or until the mixture is fluffy.
-Add baking soda, cooking oil, whisk well, take out 1 spoon of batter & add it in water, if mixture floats this is the right consistency.
-In a wok, add cooking oil, heat it, (160C), add prepared batter with a spoon, fry on medium flame until light golden.
-Let it cool down & add in a zip-lock bag, remove air & lock it, freeze for up to 1 month, when you want to use it, thaw it completely, then soak it in lukewarm water for 10 minutes.
-Soak fried bade in water for 5 minutes, take them out from water & squeeze gently to remove excess water.
Assembling:
-In a serving jars, add meethi commercial dahi, prepared bade, hari chutney, gur imli ki khatti meethi chutney, meethi dahi, chaat masala, make another layer of dahi, prepared bade, chutney & garnish with prepared chutney & crispy fried roll strips & serve!
