Smoky Italian Pasta Salad is the one you bring to a gathering and quietly take credit for. Fusilli or torsilli, smoked ham, sun-dried tomatoes, creamy mozzarella, capers, basil and toasted pine nuts. It has everything going for it.
The dressing is the whole trick. Warm olive oil, melted anchovies, garlic, white wine vinegar and lemon. You pour it over the pasta while it's still slightly warm so it soaks in rather than just sitting on top. Nobody tastes fish. They taste depth, and they ask what you did differently.
Use low-moisture mozzarella, not the fresh stuff in brine, or the salad goes watery. And don't reach for the salt early. The capers, ham, anchovies and sun-dried tomatoes are already doing that job.
Rest it 20 minutes before serving. An hour in the fridge is even better. Kenji sat by the bowl the whole time hoping for ham. He got none, but instead was treated to some frozen osso buco which he loves!
