For Batata Vada (Stuffing) Ingredients 3–4 boiled potatoes (mashed) 2 tbsp oil 1 tsp mustard seeds 7–8 curry leaves 1 tbsp garlic-green chilli paste ½ tsp turmeric Salt to taste 1 tbsp chopped coriander 1 tsp lemon juice Method Heat oil → add mustard seeds, let them crackle. Add curry leaves + garlic-chilli paste. Sauté well. Add turmeric & mashed potatoes. Add salt, mix nicely. Finish with coriander & lemon juice. Let mixture cool, then make medium-size balls. For Besan Batter Ingredients 1 cup besan (gram flour) 1/2cup rice flour Salt to taste ½ tsp turmeric 1 tsp oil Water (smooth thick batter) Method Mix everything to make a lump-free, thick batter. Frying the Vada Heat oil on medium flame. Dip potato balls in besan batter. Deep fry till golden & crisp. Remove on tissue paper. Dry Garlic Chutney (Must!) Ingredients 8–10 garlic cloves 4–5 dry red chillies Salt 2 tbsp dry coconut 4tbsp Peanuts Method Dry roast everything lightly and grind coarse. Assembling Vada Pav Slit pav Apply green chutney Sprinkle dry garlic chutney. Place hot vada inside.
