For Batata Vada (Stuffing)
Ingredients
3–4 boiled potatoes (mashed)
2 tbsp oil
1 tsp mustard seeds
7–8 curry leaves
1 tbsp garlic-green chilli paste
½ tsp turmeric
Salt to taste
1 tbsp chopped coriander
1 tsp lemon juice
Method
Heat oil → add mustard seeds, let them crackle.
Add curry leaves + garlic-chilli paste. Sauté well.
Add turmeric & mashed potatoes.
Add salt, mix nicely.
Finish with coriander & lemon juice.
Let mixture cool, then make medium-size balls.
For Besan Batter
Ingredients
1 cup besan (gram flour)
1/2cup rice flour
Salt to taste
½ tsp turmeric
1 tsp oil
Water (smooth thick batter)
Method Mix everything to make a lump-free, thick batter.
Frying the Vada
Heat oil on medium flame.
Dip potato balls in besan batter.
Deep fry till golden & crisp.
Remove on tissue paper.
Dry Garlic Chutney (Must!)
Ingredients
8–10 garlic cloves
4–5 dry red chillies
Salt
2 tbsp dry coconut
4tbsp Peanuts
Method Dry roast everything lightly and grind coarse.
Assembling Vada Pav
Slit pav
Apply green chutney
Sprinkle dry garlic chutney.
Place hot vada inside.
Press slightly & serve
