Chop the large russet potatoes into bite sized half moons and place them into a medium sized pot. Fill the pot with just enough water to cover the potatoes. Cover and bring to a boil. When the potatoes are fork tender, carefully drain out the water. Use a spatula to spread out the potatoes and allow them to rest for a few minutes 2. Preheat the oven to 425F. Add the remaining ingredients (minus the salt) to the potatoes and give it a good toss to mix. Spread onto a tray lined with parchment paper. Bake in the oven for 35-40mins
