Originally, shepherd’s pie is made with lamb, but since some people can’t find minced lamb (or simply prefer beef), I included both options below 👇
Ingredients:
1.4 lb ground lamb or beef
1 carrot
1/2 yellow onion
2 garlic cloves
1/2 cup frozen peas
2 tbsp tomato paste
1 tbsp soy sauce
1 tbsp flour
2 cups broth (beef or vegetable)
Spices: salt, black pepper, paprika, thyme, oregano
For mashed potatoes:
5 potatoes
1 egg yolk
2 tbsp melted butter
1/4 cup half & half or heavy cream (milk works too)
1/4 cup shredded Parmesan cheese

Instructions:
Peel and quarter the potatoes, boil until fork-tender, then mash with melted butter, cream, salt, and Parmesan. Mix in the egg yolk and set aside.
In a large pan, sauté onions and carrots in oil, then add garlic. Add the ground meat and cook until browned, breaking it into small pieces. Stir in the spices, tomato paste, flour, soy sauce, and broth. Cover and cook. Stir in frozen peas at the end.
Assemble: Spread the meat mixture into a baking dish, top with mashed potatoes, and smooth with a spatula. Use a fork to create texture, sprinkle with Parmesan, and bake at 400°F for 20–25 minutes. Broil for 2–3 minutes for that golden perfection.
