*Ingredients:*
_For the schnitzel:_
- ¾ cups chickpeas, canned
- 1 tsp salt
- ½ cup water
- 1 cup vital wheat gluten
- ½ cup chickpea flour
_For the breading:_
- ½ cup flour
- ⅓ cup aquafaba (or plant-based milk)
- ⅔ cups breadcrumbs
_For the mushroom gravy_
- 1 onion, chopped
- 3 cups mushrooms, sliced
- 1 tbsp flour
- 1½ cups plant-based cream
- 1 tsp paprika powder
- salt and pepper to taste
- vegetable oil for frying
⏱️Total Time: 50 minutes
1. Drain the chickpeas and save the liquid from the can (aquafaba) in a small bowl.
2. For the schnitzel, purée the chickpeas, salt, vital wheat gluten, chickpea flour, and water in a food processor until a dough forms. Slice the dough into equally sized portions, then roll them out into ovals.
3. Simmer the schnitzels for about 20 minutes over low heat. Heat a pan with cooking oil on the stove. Coat the cooked schnitzels in flour, douse in aquafaba, and cover with breadcrumbs. Fry for 3-4 minutes on both sides until golden brown.
4. For the sauce/gravy, sauté the onion and mushrooms in a lightly oiled pan, then add in the flour and plant-based cream. Season with paprika, salt, and pepper. Serve the schnitzels with the sauce on the side, and enjoy!
