Ingredients
1 butternut squash
Olive oil, salt
Baby arugula
Maple Dijon Dressing
1/4 cup olive oil
1 tbsp Grey Poupon Dijon mustard
1 tbsp maple syrup
1 tbsp apple cider vinegar
2 garlic cloves, minced
1 shallot, finely chopped
Salt & pepper
For garnish
Candied pecans, chopped fresh parsley
Instructions
Preheat oven to 425°F (220°C).
Cut the squash in half lengthwise, scoop out seeds, drizzle with olive oil, season with salt, and roast 15 min.
Meanwhile, make the maple Dijon dressing — add all ingredients to a jar and shake well.
Slice the roasted squash hasselback-style, brush generously with most of the dressing, and bake 30–45 min more.
Toss arugula with remaining dressing, place squash on top, and garnish with candied pecans and parsley.
