1/3 cup breadcrumbs

2 lbs ground beef
2 eggs

1/4 cup chopped parsley
1/2 onion, minced
- in a large bowl, mix breadcrumbs and milk. Let sit for 5 minutes to soften add more milk if mixture is too dry.
- add the remaining ingredients to the breadcrumbs mixture. Mix until just combined and roll into 1.5 inch balls.

12 oz fettuccine pasta
4 Tbsp butter
2 cups heavy cream

- in a large skillet or saucepan, melt butter and slowly pour in the heavy cream and bring to a low simmer. Slowly add the grated parmesan and stir until smooth. Season with garlic powder, salt and pepper to taste. Add cooked fettuccine to the sauce and toss until fully coated use a bit of pasta water if sauce is too thick.
Roasted broccoli:
place broccoli florets in a baking sheet, drizzle olive oil, salt, pepper and garlic powder. Toss and roast in oven at 400F for 12-15 minutes shaking halfway.

Wednesday: Birria Ramen
2 packs Trader Joe's Beef Birria
4 packs ramen (noodles only)
beef broth
diced onion
chopped cilantro
lime wedges
-heat the beef birria per package instructions. Cook the ramen noodles in beef broth. Divide the ramen into 4 bowls and pour in the beef birria. Add broth as desired and top with onion, cilantro and squeeze of lime.
Thursday: baked salmon, mashed potatoes + asparagus
baked salmon
6 salmon fillets, skin removed if desired
Marinade:
1/4 cup olive oil
4 garlic cloves, minced
1/4 cup chopped parsley
zest of 1 lemon
2 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
- mix the ingredients for the marinade and pour on salmon and place on a baking sheet. Slice the lemon and place on top of the salmon (optional). Let sit in the fridge for 30 minutes if possible. Preheat oven to 400F and bake for 15 minutes until salmon is flaky. Broil the last 1-2 minutes.
Mashed potatoes
3 lbs yellow potatoes, peeled and cut into cubes
1 cup whole milk
2 garlic cloves
4 Tbsp butter
Salt and white pepper to taste
1/4 cup grated parmesan
-place potatoes in a large pot and cover with water. Add some salt then boil until fork tender. Drain and return to pot. Use a potato ricer or use a masher to mash the potatoes.
-in the meantime, in a small pot add milk, garlic cloves and butter. Let simmer on low heat. Discard the garlic cloves. and pour into the potatoes. Add salt, pepper and parmesan cheese and stir. Add more milk if needed.
Air fried asparagus: wash and trim the asparagus and pat dry. Toss the asparagus with olive oil, salt, pepper and garlic powder. Place in air fryer basket in a single layer and air fry for 10 minutes for thick spears.
