Kachori is by far one of the most common yet loved breakfast sold as Street food in India! And so sharing the recipe of Jodhpur’s famous street food - Pyaz Kachori!
Pyaz kachori is a crispy, flaky, puffed kachori that has a good shelf life of over 4-5 days.
While the casing is made of crisp dough, the filling is of sauteed onions with a little besan and boiled potatoes to add a little body to it.
The flavour comes from the fresh roasted spices and ginger and green chilies while the Kashmiri red chilies impart and excellent colour to the Pyaz Kachori.
Traditonally Pyaz kachori is served with Kadhi in Jodhpur, you can enjoy it with sweet chutney, green chutney and fried green chilies too!

Pyaz Kachori
Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 3-4
Ingredients:
For the Dough:
2 cups flour
½ tsp Ajwain
½ tsp Salt
¼ cup Ghee
For the Stuffing:
4 medium sized Onions
1 tbsp Fennel seeds
2 tbsp Coriander seeds
1 tbsp Cumin seeds
2 medium sized boiled potatoes
3 Green Chillies, finely chopped
2” Ginger
2 tbsp Kashmiri red chilli powder
2 tbsp besan
½ tsp Citric Acid
¼ tsp Baking soda
Method:
Dough:
Add the salt, ajwain, ghee to the flour and rub well. Add a little water at a time and knead a stiff dough. Rest the dough for 10 minutes.
Stuffing:
Dry roast the coriander seeds, cumin seeds and fennel seeds lightly. Cool and crush to a coarse powder.
Finely chop the onions, ginger and green chilies.
Heat the ghee and add the crushed spices, green chilies and the ginger. Sauté till fragrant. Add the chopped onions and sauté till the onions are translucent pink. Add the chili powder and the coriander powder and mix well. Add besan and sauté for 2 minutes. Add crushed potatoes and sauté till the moisture dries out completely.
Cool the mixture and divide into 12 equal sized balls.
Divide the dough into 12 equal sized balls. Fill each dough ball with 1part of the stuffing and seal completely. Roll out the kachoris and fry in low to medium hot oil till golden and crisp.
Serve with fried green chilies and chutneys.
