Arepas (Makes 10)
- 1 kg cassava, peeled
- 100 g Salted butter
- 8 g fine salt
- 60 g yuca starch
- 150 g comte
50gr Taleggio
Cook the Cassava on vegetable stock, strain, pass trough a fine colander, add all the ingredients and extra stock if necessary for texture, cold down, roll, pan fry from the fridge, not room temp.
Ingredients:
350g masarepa
1 tsp salt
1 tsp caster sugar
60g butter
150ml whole milk
300ml hot water
100g firm mozzarella
100g taleggio
50g feta
Veg oil for greasing
Method:
In a bowl mix the masarepa and salt. Stir the whole milk and water. Add the mozzarella and beat with a wooden spoon until a dough forms.
Leave to rest for 10 mins
Divide mixture into 10 balls
Flatten with hands.
Mix the taleggio and feta.
Add 15g cheese to the middle of each disc.
Fold dough round cheese to make a disc.
Cook on hot frying pan or skillet greased with a little oil for around 3 minutes.
Buñuelos (Makes 15)
Ingredients:
200g queso blanco or grated mozzarella
110g corn flour
30g tapioca starch
1tbsp caster sugar
2 tsp baking powder
1/s tsp fine salt
1 egg
Veg oil, to deep fry
Method
Mix all ingredients until a dough is formed. Cover and leave to rest for 15 minutes.
Divide into 15 and roll into smooth balls.
Heat a deep fat fryer or a large pan of oil to 150-160C.
Fry in batches of 4. Remove and drain on a plate lined with kitchen roll.
Repeat until all the dough balls are fried.
