(ROUGHLY CUT) FRESH CORIANDER | हरा धनिया A HANDFUL CURD | दही 2 TBSP SALT | नमक TO TASTE BLACK PEPPER | काली मिर्च 1/4 TSP (FRESHLY CRUSHED) OREGANO | ओरेगैनो A LARGE PINCH RED CHILLI FLAKES | रेड चिल्ली फ्लेक्स A LARGE PINCH SANDWICH BREAD | सैंडविच ब्रेड AS REQUIRED SOFT BUTTER | मक्खन AS REQUIRED Method: Add full fat milk to a pan and bring it to a gentle boil, stirring as it heats. Once it reaches a gentle boil, switch off the flame and let it rest for 1–2 minutes. In a bowl, mix vinegar and water together. Slowly add this mixture to the milk and stir lightly. You will see the paneer begin to separate from the whey almost immediately. Strain it through a fine strainer to separate the paneer. Gently press out the excess moisture(Do not squeeze the paneer too hard, you want it soft and slightly moist for the filling, not dry and crumbly.) Transfer the paneer to a large bowl and let it cool completely. The whey collected can be saved and used for making kadhi, dough, dal, or any sabzi. By the time the paneer cools, prep the vegetables. Take the bell peppers or capsicum and cut just a plank from each side or take a full capsicum if you are using just the capsicum. Roughly cut it along with the green chillies and fresh coriander and add everything to a chopper. Chop finely. Once the paneer has cooled, add the chopped vegetables to it along with curd, salt, freshly crushed black pepper, oregano, and red chilli flakes. Mix everything well. Taste and adjust salt. The filling is ready. To assemble, take your choice of bread and apply butter evenly to the bread and then spread the filling generously on a slice of bread and place another slice on top. Heat a pan and once hot, apply butter on the surface. Place the sandwich on the pan and press it down with a plate so it toasts evenly from below. Check occasionally by lifting it slightly, once the bottom is golden and toasted, apply a little butter on the top side and carefully flip. Press again with the plate and toast the other side the same way until both sides are perfectly golden and crisp. Transfer to a chopping board, cut, and serve.
