• 2 cups (≈300 g) Basmati rice (बासमती चावल)
• 1 cup Soya chunks (सोया चंक्स)
• 1 cup Thick curd (दही)
• 2 tbsp Ginger garlic paste for marinade + 2 tbsp for cooking (अदरक लहसुन पेस्ट)
• Few slit Green chillies (हरी मिर्च)
• ½ tsp Turmeric powder (हल्दी पाउडर)
• 1–1½ tsp Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर)
• 1 tsp Red chilli powder or Black pepper powder (लाल मिर्च / काली मिर्च पाउडर)
• 2 tsp Coriander powder (धनिया पाउडर)
• 1 tsp Cumin powder (जीरा पाउडर)
• 1 tsp Garam masala + extra for garnish (गरम मसाला)
• 2–3 tsp Biryani masala (बिरयानी मसाला)
• 1 tsp Salt (marinade) + 2–3 tsp (boiling water) (नमक)
• 2–3 tbsp Oil (marinade) + 2–3 tbsp (cooking) (तेल)
• 1 handful Fresh coriander leaves (हरा धनिया)
• 1 big handful Fresh mint leaves (पुदीना)
• 2 tsp Lemon juice (marinade) + 2 tsp (boiling water) (नींबू रस)
• 2 large Potatoes, chopped (आलू)
• 1 tbsp Ghee + 2–3 tsp for layering (घी)
• Few strands Saffron soaked in warm water/milk (केसर)
Whole spices for boiling rice:
• 1 tsp Cumin seeds / Shahi jeera (जीरा / शाही जीरा)
• 2–3 Bay leaves (तेजपत्ता)
• 2–3 Green cardamom (हरी इलायची)
• 2–3 Black cardamom (बड़ी इलायची)
• 1–2 Cinnamon pieces (दालचीनी)
• 5–6 Cloves (लौंग)
Whole spices for masala base:
• 1 tsp Cumin seeds (जीरा)
• 2–3 Bay leaves (तेजपत्ता)
• 3–4 Green cardamom (हरी इलायची)
• 1 Black cardamom (बड़ी इलायची)
• 4–5 Cloves (लौंग)
• Few Whole black pepper (काली मिर्च साबुत)
• Small Cinnamon piece (दालचीनी)
Vegetables for base:
• 3 medium Onions sliced (प्याज)
• 2 Tomatoes chopped (टमाटर)
