Description
Chilaquiles are one of my all-time favorite breakfasts. In Mexico City, you’ll see a few different styles
First is the street food style — these are usually pre-mixed for convenience. The chips are mixed in a big container, then scooped out and topped with things like shredded chicken, crema, and raw onion. They’re soft, saucy, and super comforting.
Then next, you’ll have the made-to-order restaurant style — where the sauce is added right before serving. The chips stay a little crisp while still soaking up the flavor. It’s that perfect balance of crunchy and tender.
And sometimes, you’ll even see them in a torta — the saucy chilaquiles stuffed inside a crusty roll with pickled onions, crema for a handheld explosion of flavor.
At home, I like to make mine with crispy chips, fresh salsa verde, shredded chicken, crema, and raw red onion. Simple, messy, and delicious.
