Ingredients For Keeme Ki Goli For Keeme Ki Goli 500g mince meat (keema) 1 large onion (finely chopped & squeezed) 1/2 cup fresh coriander leaves Mint leaves (optional) 2 tbsp finely chopped ginger & garlic 5–6 green chilies (chopped) 3/4 tsp salt 2 tbsp crushed coriander seeds 1 tbsp crushed red chili 1 tsp black pepper powder 1 tsp roasted cumin powder 1 tsp chaat masala 1 tsp lemon juice or amchur powder 3 tbsp roasted gram flour (besan) 2 tbsp flour or wheat flour 1–2 tbsp desi ghee/oil/butter (if keema is lean) Oil for frying For Fried Green Chilies 7–8 green chilies For Chutney 1/2 cup coriander leaves 3 dry red chilies 2 green chilies 2 tbsp tamarind (soaked) 4 garlic cloves 1 tsp salt 1–2 tbsp water 1 tsp crushed red chili (optional) Method Add minced meat to a bowl. Mix in finely chopped squeezed onion, coriander leaves, ginger, garlic, and green chilies. Add salt, crushed coriander seeds, crushed red chili, black pepper, roasted cumin powder, chaat masala, lemon juice, roasted besan, and flour. Mix everything very well for 3–4 minutes until the keema becomes slightly sticky and well combined. If the keema is lean, add desi ghee, butter, or oil. Cover and marinate for 1 hour. Make small balls from the mixture. Heat oil on medium flame and fry 6–8 balls at a time for 5–6 minutes until golden brown and cooked from inside. Fry green chilies in the same oil for 1 minute. For chutney, blend coriander leaves, dry red chilies, green chilies, soaked tamarind, garlic, salt, and little water until smooth. Mix crushed red chili into the chutney if desired.
