*Ingredients:*
- 1 whole duck (about 4.5–5.5 lb)
- 4 oranges
- 2 tsp salt
- 1 tsp brown sugar
- 1 tsp ground allspice
- 1 tsp ground fennel seed
- 1 tsp ground star anise
- 2 cups fresh cranberries
- 2 cinnamon sticks
- 1 cup sugar
- ⅔ cup red port wine
- 1 tbsp miso paste
*1. Prep the duck*
Preheat the oven to 375°F. Rinse the duck inside and out with cold water. Remove excess fat and pat completely dry. Then in a small bowl, mix the salt, brown sugar, allspice, fennel, and star anise, and rub all over the outer and inner skin of the duck. Stuff the cavity with quartered oranges and roast the duck at 375°F for 60 minutes.
*2. Make the cranberry port glaze*
In a small pot, simmer the cranberries, sugar, port wine, juice of ½ orange, and cinnamon sticks for 15 minutes until the sauce thickens. Strain through a fine sieve, discard solids, and stir in miso paste.
*3. Glaze & finish roasting*
Remove the duck from the oven and brush the glaze all over the outer skin. Return to the oven for another 60 minutes until deeply golden and crispy. Serve alongside your favorite side dishes and enjoy!
