TOMATO | टमाटर 2 MEDIUM SIZED (FINELY CHOPPED)
EGGS | अंडे 4 NOS.
SALT | नमक A PINCH (to season eggs)
BLACK PEPPER | काली मिर्च A PINCH (FRESHLY CRUSHED) (to season eggs)

BUTTER | मक्खन 2 TBSP
OIL | तेल 1 TSP
CUMIN SEEDS | जीरा 1/2 TSP
CURRY LEAVES | कड़ी पत्ता 10–15 NOS.
GINGER GARLIC GREEN CHILLI PASTE | अदरक लहसुन हरी मिर्च पेस्ट 1 TBSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
BIRYANI MASALA | बिरयानी मसाला 1 TSP
HOT WATER | गरम पानी A SPLASH
COOKED RICE | पके हुए चावल 4 CUPS
SALT | नमक TO TASTE
FRESH CORIANDER STEMS | हरे धनिये की डंठल A HANDFUL (CHOPPED)

LEMON JUICE | नींबू का रस OF 1/2 LEMON
Method:
Start by roughly cutting the onions and tomatoes and adding them to a string chopper. Chop them finely and set them aside. Using a string chopper makes the process a lot faster and easier.
In a bowl, crack in the eggs, add a pinch of salt and freshly crushed black pepper, and whisk well.
You will also need 4 cups of cooked rice for this recipe. Perfect if you have left-over rice, but if you don’t then just wash 1 cup of rice, preferably basmati, allow it to soak for 30 minutes and then just boil them until cooked and strain.
Now heat a kadhai on high flame. Once hot, add butter and oil. Once they heat up, add cumin seeds and curry leaves and let them crackle.
Next, add the chopped onions and tomatoes along with salt and cook on high flame, stirring, for 3–4 minutes just until the moisture dries out. You don't need to brown them, just allow the moisture to evaporate.
Add ginger garlic green chilli paste, stir, and cook for 1–2 minutes. Once the masala comes together, reduce the flame and add kashmiri red chilli powder, turmeric powder, biryani masala, and a splash of hot water. Stir well and increase the flame to high to roast the masala through.
Once the masala is well cooked, add the beaten eggs. Stir continuously and cook for 2–3 minutes, keep them soft, do not overcook it.
Once the eggs are just done, add the cooked rice along with salt, chopped coriander stems, fresh coriander, and lemon juice. Mix everything well so the rice is evenly coated in the masala. Taste and adjust salt if required.
Finish with fresh coriander and give it a final mix.
