about 6-8 baby potatoes
4 oz skirt steak
mixed greens/spring mix

-Place baby potatoes in an air fryer and cook at 400F for about 12 minutes or until fork tender. Place potatoes on a baking sheet and using the bottom of a mason jar press down gently and making sure to keep them in one piece. The thinner the potatoes the crispier they will be. Spray with olive oil and season both sides with salt, pepper and garlic powder to taste. Return to the air fryer and cook for another 7-10 minutes at 400F until they reached your desired consistency.
In the meantime, cut skirt steak in half. This will make it easier to slice later. Pat dry and remove some of the fat. Season with salt and pepper. Add a bit of olive oil into a cast iron skillet until hot, sear the skirt steak for about 2-3 minutes on each side depending on the thickness. Remove from the skillet and let rest on a cutting board for a few minutes before slicing against the grain
Assemble the mixed greens on a plate and top with sliced cucumber, sliced avocado and a drizzle of balsamic vinaigrette, add a pinch of salt and pepper. Place potatoes and steak next to salad.

Ingredients
3 tablespoons olive oil
1 lb shrimp, peeled and deveined
2 medium shallots, sliced thinly
4 garlic cloves, minced
2 pints (about 24 oz) cherry or grape tomatoes
1 oz fresh basil, torn
10 oz angel hair pasta
salt

Directions
Season shrimp with salt, pepper and garlic powder. Toss to combine.
Heat olive oil in a skillet and sear the shrimp for 2 minutes on each side then transfer to a plate. Add more oil into the skillet if necessary and sautee the shallot for a few minutes. Add the cherry tomatoes and cook until softened 5-7 minutes. Add the minced garlic and a pinch of red pepper flakes. Cook for a few minutes then begin to mash the tomatoes by using a potato masher or the back of a spatula.
Add salt and pepper to taste along with half of the torn basil. Check for seasoning. Let simmer on low heat while you cook the angel hair pasta about 3 minutes for al dente.
Toss the shrimp back into the skillet then the pasta and the other half of the torn basil. Toss together then serve.

-spread peanut butter on one half of each tortilla, top with sliced banana and chocolate chips. Fold the other half of the tortilla over. Melt some butter in a skillet and cook for about 2 minutes on each side until golden brown. Be sure to keep the chocolate inside the tortillas and not melt into the skillet.
