Summer has arrived in Korea! ☀ When the weather gets hot, there's one dish many Koreans turn to: dakbaeksuk (whole chicken soup) 🥠 Korea has three especially hot summer days, collectively known as “Sambok.” 🔥 During this time, many people enjoy nourishing chicken dishes to recharge and beat the heat 💦 For an extra layer of flavor, try adding plenty of beoseot (the Korean word for mushrooms🍄) to your dakbaeksuk 🥣 Feeling worn out by the heat? 🥊 A warm bowl of beoseot dakbaeksuk might be just what you need ✨ --------------------------------------------------------------------------------- Beoseot dakbaeksuk ✔Ingredients 1 whole chicken A handful each of at least 4 kinds of mild-flavored mushrooms 1 onion 1 stalk green onion 5 cloves garlic 1 cup glutinous rice Salt, to taste 1/8 carrot 1/2 stalk scallion Water, as needed ✔How to make 1. Trim off the tail of the chicken and remove the fat deposits near the neck and tail areas, then rinse the chicken thoroughly inside and out under running water. 2. Place the chicken, green onion, onion, garlic, mushrooms and salt in a large pot, and add enough water to cover the ingredients. 3. If using a regular pot, boil over high heat for 20 minutes, then simmer over medium heat for about 40 minutes.
