Creamy Dahi Toast Sandwich

Ingredients:
For Hung Curd
CURD | दही 500 GRAMS
Filling
BELL PEPPER | शिमला मिर्च 1 MEDIUM SIZED.
SPRING ONION GREENS | हरे प्याज के पत्ते 1 NO.
SWEET CORN | स्वीट कॉर्न 1/3 CUP (BOILED)
OREGANO | ओरेगेनो 1/2 TSP
RED CHILLI FLAKES | रेड चिल्ली फलैक्स 1/2 TSP
SALT | नमक TO TASTE
For Assembly
BREAD | ब्रेड AS REQUIRED
BUTTER | मक्खन AS REQUIRED
SANDWICH MASALA | सैंडविच मसाला TO TASTE
Method:
Start by making the hung curd. Place a strainer over a large bowl, make sure there is a gap between the strainer and the base of the bowl so the whey can drain freely. Line the strainer with a muslin cloth.
Add the curd and gently squeeze and press it so the whey drains out. You will see the whey (liquid from the curd) getting collected in the bowl below, you can use it later when kneading dough for rotis or in dal and other curries.
Once a sufficient amount of water has been squeezed out, open the muslin cloth and mix the curd once and repeat the process of squeezing.
You will end up with a thick, cream-cheese-like hung curd. Transfer it to a bowl and set it aside.
Take one wedge of each colour of bellpepper, roughly cut them, and transfer to a chopper. Pulse until finely chopped. You can also just use 1 whole bell-pepper of any colour.
Take only the green part of the spring onion and chop it as well.
Add the chopped bellpeppers, spring onion greens, boiled corn, oregano, red chilli flakes, and salt to the hung curd. Mix everything together well. The creamy dahi filling for the sandwich is ready.
Place a pan on medium to medium-low flame and let it heat up. While it heats, assemble the sandwich.
Butter the bread slices generously on one side. Spread the chutney evenly over the buttered side.
Add a generous spoonful of filling and spread it out evenly across the bread. Sprinkle sandwich masala on top. Keep in mind the masala already has salt in it, so you do not need extra and now place another slice on top.
Once the pan is hot, apply a little butter directly on the pan and place the sandwich in. Press it down gently with a plate so it toasts evenly.
Once the bottom side is beautifully golden and crispy, apply butter on the top side and flip the sandwich over. Toast the second side the same way until it is evenly golden.
Your crispy, creamy, golden Dahi Sandwich is ready. Serve it with the chutney alongside.

Ingredients:
FRESH CORIANDER | हरा धनिया 2 CUPS
GREEN CHILLIES | हरी मिर्च 7–8 NOS.
GARLIC | लहसुन 7–8 CLOVES
CURRY LEAVES | कड़ी पत्ता 8–10 NOS.
SANDWICH MASALA | सैंडविच मसाला A LARGE PINCH
SALT | नमक TO TASTE
BREAD | ब्रेड 1 SLICE
ICE CUBE | बर्फ 1 NO.
WATER | पानी AS REQUIRED
Method:
In a mixer jar, add fresh coriander, green chillies, garlic, curry leaves, sandwich masala, salt, a slice of bread, an ice cube, and a little water.
Grind into a smooth, fine chutney. The bread helps give it body and keep the chutney thick so that it does not make the bread of the sandwich soggy.
Delicious and perfect, street style Sandwich Chutney is ready.
