Teaching George one of my favorite recipes from cooking school, Burnt Cheesecake Burnt Cheesecake from @ballymaloecookeryschool 1kg (2 1/4lb) softened cream cheese 340g (11 3/4oz) caster sugar 7 eggs 36g (1 1/2oz) of plain flour 500ml (18fl oz/2 1/4 cups) cream Preheat oven to 220°C / 425°F / Grease and line a 24cm (9 1/2 inch) spring form tin with 2 sheets of parchment so that the paper comes 10-12.5cm (4-5 inches) above the top of the tin...(the cake will climb before falling again)..Place your tin on a baking sheet so that you re ready when the mix is done. Beat cheese and sugar together until smooth...then add one egg at a time until fully incorporated. In a separate bowl sieve the plain flour into the cream and mix well before adding to the cheese and egg mix. Pour into your prepared tin and put the baking sheet into the oven.
