Slurry: 1 tbsp cornstarch + 1 tbsp water

Sesame seeds
Chopped spring onion

🔪 1. Prepare the Chicken:
Use chicken thigh (for juicier meat). If not filleted, remove the bones and cut into cubes.
Place the cubed chicken in a bowl.
Add ¾ to 1 cup cornstarch, ¼ cup soy sauce, black pepper, egg whites, and 1 ⅛ cup cold water.
Mix well until you achieve a thin batter consistency.
Let it rest for 5–10 minutes.

Heat oil in a pan (test by dipping a stick—if it bubbles, it’s ready).
Mix the chicken again before frying.
Fry until golden brown. Drain and let rest.
