Lightly grease a 9x13” pan. Line with parchment paper for easy removal. Set aside. 2. Add the marshmallows and butter to a large microwave safe bowl. Microwave on HIGH for 2-3 minutes or until melted and smooth. 3. Stir in the vanilla extract and add the Rice Krispies® cereal. Stir until well coated and empty the bowl into the prepared pan. Press into the pan using a lightly buttered spatula. Allow them to cool for 5-10 minutes before cutting into bars. Set aside. 4. Chop the dark chocolate into small pieces. 5. Set aside ⅓ (50 g) of the chocolate. Place the remaining ⅔ (100 g) of chopped dark chocolate in a small microwave safe bowl. Microwave, uncovered, on HIGH for 1 minute. Stir. Microwave, uncovered, at high for 10 to 30 seconds more or until melted, stirring every 10 seconds. Stir in the remaining chopped chocolate pieces until smooth. 6. Carefully insert 1 ice cream stick into each of the Rice Krispies® cereal bars. Dip the bars into the melted chocolate covering the bottom half of each bar, shake lightly to allow any excess chocolate to drip off. Place on a wax-paper-lined baking sheet. Let stand at room temperature for 5 to 10 minutes or until partially set (chocolate is still soft). 7. Decorate each bar by pressing candy-coated candies into partially set dark chocolate. Return to a wax-paper-lined baking sheet. Let stand at room temperature for 1 to 2 hours until completely set. Recipe Notes Allow leftover melted chocolate to cool and store in a sealed container for future use. In order to properly dip the squares you need to use 2x more chocolate than you actually need in this recipe.
