SEAFOOD ESCABECHE FILLET O FISH
Ingredients:
500g scallops
300g prawns
300g barramundi
15g salt
15g MSG
5g black pepper
two slices american cheese
500g store bought ranch
1 bunch chopped dill
1 bunch chopped coriander
1 bunch parsley
½ bunch chopped tarragon
1 bunch sliced chives
100g French’s yellow mustard
20g honey
10g cayenne
10g white pepper
½ cup bell pepper
½ cup onion
Procedure:
1. Combine scallops, prawns, barramundi, salt, MSG, and pepper in a food processor then blend it. Once thoroughly combined, form into 200-300 gram patties using a ring mold.
2. Freeze for about 20 minutes before coating in flour, egg, and breadcrumbs.
3. Shallow fry in oil for about 8 minutes each side or until inside is fully cooked. You’ll know it is cooked by using a temperature probe (90°C) or by poking it—if it’s firm and bouncy, it’s done.
4. For the herby ranch sauce, roughly chop all herbs then mix in with the store bought ranch then set aside.
5. Make the hot mustard sauce by sautéing bell pepper and onions until fragrant then add in mustard, honey, salt, and pepper. Blitz with a hand blender then set aside.
6. Toast burger buns then put a slice of american cheese on each side. Spread a generous amount of hot mustard.
7. Add in the seafood patty then top off with the herby ranch. Makes 1-2 servings.
