Steamed Fish with Soy Sauce
Ingredients
1 whole fish (sea bass, tilapia, snapper, or pomfret)
2–3 tbsp light soy sauce
1 tsp oyster sauce (optional, for depth)
1 tsp sugar
2 tbsp water or fish stock
1 tbsp sesame oil
Ginger (julienned)
Spring onions (sliced)
Fresh coriander (optional)
2 tbsp hot oil (for finishing)
Instructions:
1. Clean the fish
Rinse well, remove scales and guts. Make 2–3 shallow cuts on each side.
2. Prepare for steaming
Place ginger slices inside the fish and on top. Put fish on a heatproof plate.
3. Steam the fish
Steam over high heat for 8–12 minutes (depends on fish size) until fully cooked.
4. Make the soy sauce
Mix soy sauce, oyster sauce, sugar, water, and sesame oil. Heat lightly until sugar dissolves.
5. Finish the dish
Remove fish from steamer, discard excess liquid.
