🟢 Preparation
Prepare ¼ cup almond butter.
🟢 Ingredients
Dry Ingredients
½ cup ragi flour
¼ cup cacao powder
½ tsp baking soda
½ tsp vanilla powder
⅛ tsp rock salt
Wet Ingredients
½ cup sieved jaggery powder
1 tbsp water
2 tsp lemon juice
¼ cup almond butter
Toppings
2 tbsp cacao nibs or roasted chopped almonds
🟢 Method
1. Sift all dry ingredients into a mixing bowl.
2. In another bowl, mix all wet ingredients (except almond butter) until the jaggery dissolves.
3. Add almond butter and mix well.
4. Gradually add the wet mixture to the dry and form a dough. Add 1 tsp water only if needed. Avoid over-kneading.
5. Preheat the oven to 160°C for 10 minutes.
6. Place the dough between two greased parchment sheets and roll evenly - not too thick, not too thin.
7. Remove the top sheet, mark diagonal lines with a skewer, cut into squares, add toppings, and press gently.
8. Bake at 160°C for 15 minutes.
9. Let them cool completely and store in an airtight glass jar for up to a week.
Tip: Rolling the dough between parchment sheets keeps it smooth and prevents sticking. It makes the process much easier!
