Making Diabetic Friendly Oreos

This was our first attempt at this or even something like this and...we need more practice haha Finding recipes for Maverick can be really tricky. Carbs and sugar need to be calculated meticulously for insulin dosing which can make other high sugar/carb snacks difficult without spiking his blood sugar. We are looking for alternatives which may contain less sugar/carbs but still taste yummy and feel like a treat so that he may enjoy these with, hopefully, less of a blood sugar spike!
