Mutton Nihari, Lal Maas, Khameeri Roti, Motton Korma and Biryani! | Jaipur ka Mutton Palace 😋

For the very first time in a long, long while… I felt like I had entered a Mutton Darbar. Welcome to Muhammadi Palace, Jaipur – jahan ek hi riyaasat hai: Mutton. Mutton. And more mutton. From the very first bite of Mutton Nihari (nalqi waali)– slow-cooked for 12 hours in desi ghee – I knew this place was different. That soft meat, that rich, silky shorba… and with it, my absolute favourite, Khameeri Roti. हल्की सी खटास, garma garam, and then that one dip into the nihari – bas, duniya side ho jaati hai. Phir aate hain baaki hero log: Mutton Siri Paya / Siriya – garma garam, soulful, full power collagen comfort Mutton Stew (Bistu) – subtle, aromatic, ilaaychi, kali mirch ka kamaal Lal Maas – Rajasthan ki shaan, Kashmiri laal mirch, kali mirch… ekdum dumdaar Mutton Korma – brown onion, dahi, khada masala… pura daawat wala feel Mutton White Korma– kaju, magaj, melt-in-the-mouth tenderness, bilkul bina mirchi Mutton Biryani / Pulao – long-grain rice with a surprising jeera ka tadka in the chawal. Light, fragrant, with almost masala-less, super-tender mutton. Yeh biryani alag hi school ki hai. Aur end mein… ek pyari si Kheer – doodh, mawa, chawal, dry fruits – 5–6 ghante tak pakti hai. Perfect meetha full stop to a mutton-loaded kahaani. Faisal bhai ke saath baithkar unke 30 saal ke safar ki kahaani bhi sunoge – kaise ek chhoti gali se shuru hua Mohammadi, aaj iss “palace” tak pahunch gaya.
