Ingredients for Marinating
1 kg chicken, cut into medium-sized pieces (bone-in or boneless, your choice)
1½ teaspoons salt
1 teaspoon turmeric powder
Juice of ½ lemon
2-inch piece fresh ginger
5 cloves garlic
2 green cardamom pods
Crush the ginger, garlic, and cardamom together and add them to the chicken. Mix everything well, cover, and marinate for 30 minutes (either at room temperature or in the refrigerator).
Secret Spice Powder
Heat a pan and dry roast the following spices:
2 tablespoons coriander seeds
2 teaspoons cumin seeds
½ teaspoon fennel seeds
1 teaspoon black peppercorns
6 cloves
4 green cardamom pods
1-inch cinnamon stick (broken into small pieces)
A small piece of mace (javitri)
Dry ginger (sonth)
12 g dried coconut (kopra), about 6–7 small pieces
Roast on high heat for only 15–20 seconds (do not burn them). Let the spices cool, then grind them together with:
3 teaspoons Kashmiri red chili powder
If you don't have Kashmiri chili powder, use 2 teaspoons regular red chili powder instead. Kashmiri chili powder gives a brighter color without making the dish too spicy.
Your fragrant spice powder is now ready.
Cooking
Heat in a heavy pan:
5 tablespoons oil
5 tablespoons ghee
Once hot, add:
1 large onion (about 100 g), finely chopped
Fry until golden brown.
Then add:
2 medium tomatoes (about 100 g total), chopped
Cook well, then add:
2 tablespoons ginger-garlic paste
2–3 chopped green chilies
Cook until fragrant, then add the marinated chicken.
Cook the chicken over high heat, stirring constantly so it browns well.
After the chicken is well roasted, reduce the heat to low, cover, and cook for 5–6 minutes (the pieces are small, so they cook quickly).
Increase the heat again and cook off any excess moisture. Since this is bhuna chicken, it should be well roasted at the end. Don't overcook the chicken or it will start falling apart.
Now add the prepared spice powder and mix well over high heat.
The recipe will develop a beautiful color and an amazing aroma.
Add:
2 tablespoons tomato ketchup
Mix well.
For an even deeper red color, you can add a little more Kashmiri red chili powder (optional).
Then add:
2 tablespoons yogurt
Mix well and cook. Lower the heat and cook for another 3–4 minutes.
Finally add:
Finely chopped fresh coriander (cilantro)
Curry leaves
(Optional) 2–3 more chopped green chilies at the end
