This is a rich, slow-cooked black chicken (Kadaknath / Silkie-style) curry, built beautifully from the whole bird and bones for deep flavour.

2 tbsp oil
½ cup water
Method:
1) Prep the black chicken
Wash and cut the whole black chicken into curry pieces, keeping:
drumsticks
wings
ribs
neck
back bone pieces
These add collagen and flavour.
2) Initial sear
In a wok, heat oil and lightly sear the black chicken pieces with a little salt and Chillipowder until slightly browned.
3) Build aromatics
Add:
shallots
garlic
ginger
green chillies
curry leaves
dried red chilli
Sauté until fragrant.
4) Spice bloom
Add:
fennel seeds
mustard seeds
turmeric
chilli powder
coriander powder
Cook until the oil separates.
5) Tomato phase
Add tomato sauce or crushed tomato and cook down until thick and jammy.
6) Slow simmer
Add ½ cup water, cover, and simmer 25–35 minutes until the black chicken softens.
