*Ingredients:*
_🐟 For the spicy tuna:_
- 2 cups sushi-grade ahi tuna, cubed
- ¼ cup mayonnaise (preferably Kewpie)
- 3 Tbsp sriracha
- 1–2 Tbsp soy sauce
- 2 tsp sesame oil
- juice of ½ lime
- 2 Tbsp scallions
_🌮 For the nori taco shells:_
- 4 nori sheets
- 1 cup all-purpose flour
- ⅓ cup cornstarch
- 1 tsp baking powder
- 1½ tsp salt
- ¾ cup sparkling water
- 1 large egg
- About 2 cups neutral vegetable oil, for frying
_🫙 For the spicy mayo:_
- ½ cup mayonnaise
- 1–3 Tbsp sambal oelek
- 1 Tbsp sriracha
- ¼ tsp sesame oil
- ½ tsp sugar
- 1 tsp lemon juice
_🍣 For the assembly:_
- 1 avocado, thinly sliced
- ¾ cup thinly sliced cucumber
- 1 Tbsp sesame seeds
- 1½ cups cooked jasmine rice
- 2 Tbsp scallions, for garnish
*1. Make the nori taco shells*
In a mixing bowl, whisk together the flour, cornstarch, baking powder, and salt. Add sparkling water and 1 egg, whisking until a smooth tempura-style batter forms. Then, cut each nori sheet into 4 squares and heat oil in a pan to 350°F. Dip each nori square into the batter and fry until golden and crispy. Immediately place the fried nori in-between the gaps of the bottom side of a muffin tin to form them into a taco shape as they cool.
*2. Make the spicy tuna & spicy mayo*
In a bowl, combine the chopped tuna, mayonnaise, sriracha, soy sauce, sesame oil, lime juice, and green onions and mix gently until well combined. Refrigerate until ready to use. In another small bowl, whisk together mayonnaise, sambal oelek, sriracha, sesame oil, sugar, and lemon juice until smooth and creamy.
*3. Assemble & enjoy*
Fill each crispy nori shell with a small scoop of cooked rice. Add a generous scoop of spicy tuna, top with avocado, cucumber, a drizzle of spicy mayo, sesame seeds, and green onions. Serve immediately while the shells are crunchy!
