Ingredients 🍯
750g lamb cutlets
1 orange, juiced
2 tbsp soy sauce
1 tbsp honey
1 tsp chinese 5 spice
To serve:
Sesame seeds
1 red chilli, sliced
1 spring onion, sliced
Microwave rice to serve
Method 🧑🍳
1. Preheat the oven to 200°C (fan 180°C). Line a large baking tray with baking paper or foil.
2. Make the marinade: In a bowl, mix together the orange juice, soy sauce, honey and Chinese five spice.
3. Marinate the lamb: Add the lamb cutlets to the marinade and toss to coat well. Leave to marinate for at least 15 minutes (longer if time allows).
4. Bake: Arrange the lamb cutlets in a single layer on the prepared tray and pour over any
remaining marinade. Bake for 20-25 minutes, turning once halfway and basting with the pan juices, until cooked through and sticky.
5. Glaze (optional): If you want extra caramelisation, switch the oven to grill for the final 2–3 minutes, watching closely to avoid burning.
6. Prepare the rice: Heat the microwave rice according to packet instructions.
7. Serve: Serve the lamb over the rice, spooning over the sticky orange glaze. Finish with sesame seeds, sliced red chilli and spring onion.
To Serve 🍽️
Perfect with steamed greens or a fresh cucumber salad on the side.
Optional: lime wedges or a drizzle of sesame oil.
