🥒 Ingredients
🔸 For the dough:
2 medium zucchini
3 eggs
¾ cup + 1 tbsp (200 ml) milk
2 tbsp. (30 ml) olive or vegetable oil
1⅔ cups (200 g) flour
1 teaspoon (1 tsp) baking powder
1 medium onion
Salt - to taste
1 teaspoon (1 tsp) paprika
2 teaspoons (2 tsp) sugar
🔸 For the filling/topping:
¾ cup (100 g) grated mozzarella
Cherry tomatoes - to taste
Favorite seasonings - to taste
🔸 For the sauce:
1 cucumber (peeled)
3-4 cloves garlic
⅓ cup + 1 tbsp (100 g) mayonnaise
3½ tbsp. spoons (100 g) of cream cheese
👩🍳 Preparation:
Grate the zucchini, add salt, mix and leave to infuse.
Meanwhile, beat the eggs, add milk, butter, sugar, salt, paprika, flour and baking powder. Mix.
Chop the onion and add to the dough.
Squeeze the juice from the zucchini and add to the dough. Mix.
Bake the pancakes in a preheated frying pan on both sides until golden brown.
Place the pancakes on a baking sheet, top with cheese, cherry tomatoes, season and bake in the oven for 20 minutes at 180°C.
For the sauce: grate the cucumber, add grated garlic, mayonnaise and cream cheese. Mix - done!
