It is a bit more lean than salmon, so dressing it up with some good quality oil, rich dressings, or cream products is a great way to maximize depth of flavor. I would advise you using the freshest of trout for this recipe and NOT what you would find in the local grocery store. I might even go as far to say that ONLY wild caught (in clean waters) or Smoke-In-Chimney's (Trusted hatcheries) trout will be your only good choice. There's plenty of options with salmon or even steelhead products as long as they seem super fresh, but cured rainbow trout is something truly unique and special.
