Prawns Biryani
Ingredients for Boiled Rice:
Water 7-8 cups
Salt 1 tbsp
Cumin seeds 1 tbsp
Soaked rice 3 cups
Ingredients for Prawns Masala:
Oil 1/4 cup
Cloves 7-8umin seeds 1 tsp
Whole red button chilies 4-5
Star anise 2
Green cardamom 3-4
Cinnamon sticks 2
Onion (sliced) 1 cup
Ginger garlic paste 1 tbsp
Tomato puree 1/2 cup
Turmeric powder 1/2 tsp
Red chili flakes 1 tsp
Salt 1/2 tbsp
Coriander powder 1 tbsp
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Prawns 600 g
Yogurt 1 cup
Ingredients for Assembling:
Boiled rice as required
Prawns masala
Green coriander as required
Lemon slice as required
Green chili (half cut) as required
Orange food color 1/2 tsp
Kewra water 1 tsp
Directions for Boiled Rice Preparation:
In a pot heat water and add salt, cumin seeds. Bring it to a boil.
Add soaked rice and 80% done. Strain and set aside.
Directions for Prawns Masala Preparation:
In a pot heat oil and add cumin seeds, cloves, whole red button chilies, star anise, green cardamom, cinnamon sticks and cook for a minute.
Add onion and cook until light brown. Add ginger garlic paste and cook for a minute.
Add tomato puree, turmeric powder, red chili flakes, salt, coriander powder, red chili powder, cumin powder and cook for 3-4 mins.
Add prawns and cook until fully done.
Now add yogurt and cook until oil separates. Set aside.
Directions for Assembling:
In a preheated pot add layers of boiled rice and prawns masala. Garnish them with green coriander, lemon slices, green chilies and lastly add food color and kewra water.
Cover and steam the rice over low flame for 10-15 mins.
Your Prawns Biryani is ready. Serve and enjoy.
