Fried rice is one of the world’s most loved dishes.
It is said that fried rice was created in Yangzhou in China as a clever way of using leftover rice. And wherever the Chinese migrants travelled, they took the fried rice with them. And as they came to India, an entire new cuisine was born.
And because I am making the Indo Chinese version of the fried rice with you, I have used Basmati rice instead of the traditionally used short grain rice in the Chinese version.
Using leftover rice for fried rice would ensure perfect non sticky fried rice. But I have shared with you how you can make fried rice using fresh rice too. And ensure that you get the same non sticky, smoky flavoured fried rice at home as you get in the restaurants.
I have shared 3 versions of fried rice with you, Veg Fried Rice, Egg Fried Rice & Chicken Fried Rice.

Fried Rice
Preparation time: 30 minutes
Cooking time: 4-5 minutes each
Serves: 3-4
Ingredients:
For the rice:
2 cups basmati rice
6 cups water
1 tsp salt
1 tsp oil
For the veg fried rice:
2 cups cooked rice, chilled
2 tbsp oil
1 tbsp chopped ginger
1 tbsp chopped garlic
1 tbsp chopped green chilies
2 tbsp chopped onions
½ cup chopped veggies (beans, capsicum, carrots, bell peppers)
1 tsp light soya sauce sauce
1 tsp dark soya sauce
1 tsp vinegar
1 tsp MSG
Salt to taste
Pepper to taste
Spring onion to garnish
Method:
Heat oil in a wok to smoke point. Add chopped ginger, garlic, green chillies and saute till fragrant. Add onions and saute for 2 minutes. Add the veggies and toss well over high heat. Add chilled boiled rice, sauces, season with salt, pepper, MSG and toss well. Serve immediately garnished with spring onions.
For Chicken fried rice:
Add ½ cup boiled shredded chicken to veg fried rice
For Egg Fried Rice:
2 cups cooked rice, chilled
2 tbsp oil
1 tbsp chopped ginger
1 tbsp chopped garlic
1 tbsp chopped green chilies
2 tbsp chopped onions
2 eggs
1 tbsp light soya sauce sauce
1 tbsp chili oil
1 tsp vinegar
1 tsp MSG
Salt to taste
Pepper to taste
Spring onion to garnish
Method:
Heat oil in a wok to smoke point. Add chopped ginger, garlic, green chillies and saute till fragrant. Add onions and saute for 2 minutes. Add the eggs and scramble immediately over high heat. Add chilled boiled rice, sauces, season with salt, pepper, MSG and toss well. Serve immediately garnished with spring onions.
