Aloo Matar Paneer Puff
Ingredients:
• Puff pastry sheets – 2–3
• Boiled potatoes – 2 medium (mashed)
• Green peas (matar) – ¼ cup
• Paneer – ½ cup (crumbled)
• Oil – 1 tbsp
• Jeera (cumin seeds) – ½ tsp
• Chopped onions – 2 tbsp
• Green chilli – 1 (finely chopped)
• Ginger garlic paste – a pinch (optional)
• Haldi (turmeric powder) – ¼ tsp
• Red chilli powder – ½ tsp
• Dhaniya powder – a pinch
• Garam masala – a pinch
• Salt – to taste
• Chopped coriander leaves – 2 tbsp
Process:
1. Heat oil in a pan and add jeera. Let it crackle.
2. Add chopped onions and sauté until soft.
3. Add green chilli and a little ginger garlic paste; cook for a few seconds.
4. Add turmeric, red chilli powder, a pinch of dhaniya powder and salt.
5. Add green peas and cook for 1–2 minutes.
6. Add mashed potatoes and crumbled paneer. Mix everything well.
7. Finish with a pinch of garam masala and chopped coriander leaves. Let the stuffing cool completely.
8. Cut puff pastry sheets into rectangles, place some stuffing in the center and fold to seal the edges.
9. Bake at 180°C for 18–20 minutes or air fry at 180°C for 12–15 minutes until golden, crisp and flaky.
