Low carb Lebanese meat pies using rice paper rolls!
INGREDIENTS
2 tablespoons olive oil
1 medium onion, diced
1 pound 95% lean ground beef
2 Roma tomatoes, seeded and finely chopped
¼ cup finely chopped fresh parsley
1 teaspoon salt
2 teaspoons 7 Spice
2 teaspoons sumac
½ teaspoon cinnamon
12–14 round rice paper sheets
Olive oil spray
INSTRUCTIONS
1. Heat the olive oil in a medium skillet over medium heat. Add the diced onion and cook until soft and translucent, about 8–10 minutes. Add the ground beef and cook, breaking it apart, until browned and fully cooked through, about 8–10 minutes.
2. Stir in the tomatoes and parsley. Season with salt, 7 Spice, sumac, and cinnamon. Cook for 2–3 more minutes until everything is well combined and most of the moisture has evaporated. Remove from heat and let the mixture cool slightly.
3. Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 5–7 seconds until just pliable
4. Place it on a clean surface. Spoon about 2-3 tablespoons of the meat mixture in the middle, fold 4 times to make a square. Repeat with another layer of rice paper, then transfer in a single layer to the air fryer.
5. Lightly spray the top of the meat pies. Air Fry 400°F for 8–12 minutes, until golden brown and crispy. Let cool slightly to crisp more before serving.
