Now, you don't need to be a fully fledged home cook to be able to recreate this and so hopefully with this guide, each and every beginner out there will be able to follow along and create some delicious food at home! Roast Potatoes
Potatoes:
- 2kg King Edward potatoes
- 270g beef dripping
- 3 garlic cloves
- Few sprigs of rosemary
Salt:
- Zest of 1 lemon
- Few sprigs of rosemary
- 2 tbsp Maldon sea salt

Meat Stuffing
- 3 knobs of butter (45g)
- 2 large onions, finely diced
- 6 tbsp finely chopped sage
- 2 tbsp finely chopped thyme
- 4 garlic cloves, minced
- 360g pre-cooked chestnuts
- 900g sausage meat
- 200g breadcrumbs
- 2 eggs
- 20 gratings nutmeg
- 1 tsp ground cinnamon
- Zest & juice of 1 orange
- Salt & pepper, to taste
- 1.5 tbsp apple cider vinegar

Veggie Stuffing
- 3 large knobs of butter (45g)
- 2 leeks, finely chopped
- 25g finely chopped dried porcini mushrooms, soaked in 200ml stock
- 1 celery stalk, finely chopped
- 150g dried apricots, chopped
- 1.5 tbsp finely chopped rosemary (5 sprigs)
- 3 cloves garlic, minced
- 50g walnuts, finely chopped
- 1 tsp miso paste
- 2 tbsp finely chopped parsley
- 300g crusty bread, cut into small chunks
- 2 eggs
- 20 gratings nutmeg
- Salt & pepper

Cranberry Sauce
- 2 packs fresh cranberries
- Zest and juice of 2 oranges
- 4 tbsp sugar
- 2 tbsp balsamic vinegar
- Sea salt, to taste

- 700ml beef sock
- 200g smoked streaky bacon, cut into cubes
- 100g pancetta
- 1 onion, diced
- 2 cloves garlic, sliced
- 1 tbsp of thyme
- 3 tbsp flour
- 1 litre water
- 200ml beer or 125ml red wine
- 1 heaped tsp marmite
- 3 knIntobs unsalted butter
- Few dashes Worcestershire sauce

- 650g brussels sprouts
- 3 tbsp olive oil
- Sea salt
- 2 tbsp honey
Sauce:
- 400g Calabrian spicy sausage
- 1 tbsp honey
- 100ml cream
- 1 garlic clove, minced
- 1/4 tsp white wine vinegar
Breadcrumbs:
- 50g breadcrumbs
- 2 tbsp olive oil
- Salt

- 10 chipolatas
- 10-15 pieces streaky bacon
