Ingredients: 250g Green Chilies 250g Peeled Garlic 2 cups Mustard Oil ¼ cup coriander seeds ¼ cup yellow mustard seeds 2 tbsp fennel seeds 1 tbsp fenugreek seeds 1 tsp nigella seeds 3 tbsp salt 50 g Kashmiri red chilli powder 1 tsp turmeric powder ¼ cup vinegar Method: Wash, wipe, destem and slit the green chilies. Lightly roast the coriander, fenugreek, fennel and mustard seeds. Grind to a coarse powder. Add the salt, turmeric, red chili powder and nigella seeds. Heat mustard oil to smoke point. Cool the oil. Heat again till medium hot. Add in the garlic and cook for 4-5 minutes. Add in the green chilies and remove from heat. Add the powdered spices and vinegar and mix well. Cool and store in clean glass bottles.
