Grilled Chicken with Gravy & Mashed Potatoes
Ingredients:
Chicken leg boneless 4 piece
Boiled & mashed potatoes 1 kg
Cream 1 cup
White pepper 2 tsp
Crushed red chilies 1 tsp
Oil 6 tbsp
Chopped garlic 2 tbsp
Beef bones ½ kg
Flour 2 tbsp
Salt 3 tsp
Cumin seeds 1 tbsp
Onion rings of 1 large
Oregano 1 tsp
Sliced onion 1 small
Method
In a bowl add chicken, 1 tsp white pepper, crushed red chilies, cumin seeds, oregano, 1 tbsp garlic and 1 tsp salt then mix well and set aside to marinate for 2 hours. Heat 3 tbsp oil in a grill pan and fry chicken on both sides for 4 to 5 minutes then cover and cook on low heat for 15 minutes and set aside. In a pan add 3 tbsp oil add beef bones and fry for 10 minutes. Then add 1 tsp salt, 1 small sliced onion and 1 tbsp garlic and fry for another 5 minutes. Now add 4 cups of water
Spring Chicken
Ingredients:
Chicken with skin (8 pieces) 1 full
Corn flour 5 tbsp
Salt 1-1/2 tsp
Vinegar 3 tbsp
Soy sauce 2 tbsp
Oil for frying
Black pepper 1 tbsp
Eggs 2
Sliced spring onion 1
Ginger garlic paste 1 tbsp
Method:
In a bowl add all the ingredients except oil and spring onion then mix well. Heat oil in a pan and deep fry chicken for 10-12 minutes. Remove and garnish with spring onion then serve.
