To make a butler's dozen you will need:
* 500g strong white flour
* 75g caster sugar
* 2 tsp mixed spice
* 1 tsp ground cinnamon
* 1 lemon, for zesting
* 10g salt
* 10g fast-action dried yeast
* 40g butter
* 300ml oz milk
* 1 egg
* 200g sultanas
* white chocolate chips (for baking)
* 50g of chopped citrus peel
* 75g of plain flour for topping
* golden syrup for glazing
Instructions:
1. mix the dry ingredients - flour, sugar, spices, and lemon zest into a large bowl
2. when you add the salt and yeast put them on opposite sides of the bowl or you will die
3. melt the butter in a pan, warm some milk, add the butter and HALF the milk to the dry ingredients, add the egg and mix together - slowly add the rest of the milk to form a dough
4. flour a surface and tip out the dough, knead in the sultanas and citrus peel and chocolate chips, knead for 10 mins and make a smooth ball
5. oil a bowl, add the dough, cover with cling film/sArAn WrAP, leave somewhere warm until it's doubled in size (90 mins)
6. if you have time and want a wide spread - flop the dough onto the floured surface, knead for another 5 mins then back in the bowl and wrap until it's doubled again (60 mins)
7. flop onto floured surface again, cut into 12 equal lumps, lovingly tease them into a ball shape, line tray with baking paper and space balls closely
8. slip each baking tray into a clear plastic bag, leave for 60 minutes until buns double in size AGAIN,
9. preheat oven to 220C/200C fan, for the topping, mix the 75g of flour with 100ml of water (divide and add colouring if u want), pour into piping bag, remember to secure the back end of the bag ...
10. once buns are risen, pipe your christ-approved crosses or bunny ears onto buns
11. bake buns for 15-20 mins until golden brown
12. melt golden syrup and brush onto baked buns
13. cut in half and toast/grill them and spread salty butter if you're a dirty nasty phreak who knows how to live
