Protein cookie recipe right this way 👇
What you need:
• 150 g (5.3 oz) unsalted butter, softened
• 150 g (5.3 oz) nut butter
• 240 g (8.4 oz) light brown soft sugar or coconut sugar
• 2 large eggs
• 8 scoops Protein Prodigy (my new protein powder)
• 100 g (3.6 oz) plain flour
• 1 teaspoon bicarbonate of soda
• 1 teaspoon ground cinnamon
• 200 g (7 oz) rolled oats
• 150 g (5.3 oz) roughly chopped nuts or mixed seeds
• 150 g (5.3 oz) dark chocolate, roughly chopped
• 2 pinches of salt
How to make it:
1️⃣ Heat the oven to 170°C / 150°C fan / 340°F / Gas3.
2️⃣ In a mixing bowl, using a wooden spoon or rubber spatula, beat together the butter, nut butter and sugar for 1–2 minutes until pale and light.
3️⃣ Add the eggs and mix until thoroughly combined.
4️⃣ Add Protein Prodigy, the flour, bicarbonate of soda, cinnamon and salt. Mix until combined. Add the oats, chopped nuts and chocolate, then mix again until evenly distributed throughout the mixture.
5️⃣ Divide the mixture into 16-20 portions, shape them into rough balls and arrange them on lined baking sheets.
6️⃣ Bake for 10–12 minutes, until golden brown. Leave to cool on a wire rack.
Makes approximately 16–20 cookies.
