Ingredients:
For the passatelli:
120g white breadcrumbs
120g parmesan
3 eggs
Pinch salt
Vegetable stock- to cook
For the sauce:
1 onion, finely chopped
2 garlic cloves, minced
3 beetroot, roasted and peeled
100g feta
1 lemon, juice
Olive oil
Salt and pepper
Method:
Passatelli:
Mix the breadcrumbs, parmesan, eggs and salt in a bowl. Combine until a dough forms. Cover and set aside.
Bring a large pan of vegetable stock to the boil.
Press the rested dough through a ricer and drop immediately into the pan of boiling stock and cook until they float.
Remove from water with a spider and drop into the sauce.
For the sauce:
In a frying pan, sweat onion and garlic in olive oil.
Chop the beetroot and add. Leave to cool.
Blend with feta, lemon juice, salt and pepper.
Carrot Fritters with carrot top pesto
For the fritters:
4 carrots with tops
2 spring onions, sliced
2 eggs, beaten
1 tbsp plain flour
Small handful parsley, chopped
Small handful chives, chopped
50g Feta, crumbled
50 parmesan, grated
Salt and pepper
Oil, to fry
For the carrot top pesto:
Handful carrot tops
Handful of parsley
Handful of basil
50g hazelnuts
50g parmesan
Olive Oil
Juice of half a lemon
Method:
Remove the tops from the carrots and set aside. Grate the carrots.
Add carrots, spring onions, parsley and chives to a bowl.
Mix in beaten eggs, parmesan and flour.
Fold in feta. Season with salt and pepper.
Add a little oil to a saucepan and warm over a med-high heat.
Spoon in 3 tbsp mixture.
Leave to fry for a few minutes. Flip.
Repeat until all mix is used.
Carrot top pesto:
Add carrot tops, parsley, basil, hazelnuts and parmesan to a blender.
With the blades running, stream in the olive oil until you get your desired consistency, this can be thick or loose depending on your preference.
Taste and adjust seasoning.
Serving suggestion:
Serve the fritters on plates with the pesto as the carrot top.
